After the overdose of sweets for the holidays, it’s time to ease back into it with some healthy Oatmeal, raisin and walnut cookies.  I thought about adding mini chocolate chips too, but decided I better just stick to the recipe.  Maybe next time.

Gathering my ingredients needed

I can’t wait until my first batch comes out of the oven!

Here is the recipe:

  • 1 C butter or margarine
  • 3/4 C packed brown sugar
  • 1/4 C sugar
  • 1 egg
  • 1 t. vanilla
  • 1 t. baking soda
  • 1 t. cinnamon
  • 1/4 t. nutmeg
  • 1-1/2 C flour
  • 2 C oats
  • 1 C raisins
  • 3/4 C chopped walnuts

Heat oven to 375 degrees.  Beat butter and sugars until light and fluffy.  Beat in egg and vanilla.  Combine flour, baking soda and spices in separate bowl.  Add to butter mixture a little at a time, mixing well.  Stir in oats, raisins and walnuts.

Drop by rounded teaspoon on ungreased cookie sheet.  Bake 8 to 9 minutes for chewy cookies and 10 to 11 minutes for a more crisp cookie.  Cool 1 minute on cookie sheet and transfer to cooling rack.

    Oh yum, they look delicious! I’m planning on making some healthy zucchini muffins one of these days. I need to stop at a grocery store that carries things like oat bran and ground flax first.
