Comfort food…

I had a taste for some comfort food last night for dinner, even though the outside temperature was 80+ degrees!

Chili and biscuits!  Yum.

Chili Recipe:

1 lb. ground beef*     I now use ground turkey breast.
1 onion, chopped
15 oz. can diced tomatoes
2 t. chili powder
1/2 t. paprika
1/2 t. salt (or to taste)
1 can kidney beans
1 can pinto beans
flour, as needed for thicken to your liking
Brown the turkey and onions until browned and onions clear.  Add the remaining ingredients(except flour).  Cook 20 minutes.  If you like it a bit thicker, add a mix of 1 T flour with water to make paste and add to chili.  Stir and cook a few minutes more.
I personally do not like it too spicy, so my husband add some cayenne pepper to his at the table!

 

Drop Biscuits Recipe:

(This made 6 biscuits for us.  You can easily double for your needs)
1 C flour
2 t. baking powder
1/2 t salt
1-1/4 T shortening
1/2 C milk
Combine flour, powder and salt.  Mix.  Add shortening and mix with fork.  Make a well in the center and pour all the milk at once.  Stir only until flour is moistened.  Dough will start to rise with the baking powder.  Drop by spoonfuls on greased pan or in a greased muffin pan and bake in very hot oven, 450 degrees for 10 minutes.
